Seed Potatoes

Potatoes, harvested from your backyard, and then boiled and served with plenty of butter, are nothing short of heavenly. Pick them small for the most delicate garden treat. Let them get larger if you want to mash or store them. Plant the seed Potatoes two to four weeks before the last spring frost. Plant them 12 in. apart and cover with about 3 in. of soil. When the shoots reach 10-12 in. tall, use a hoe or shovel to scoop soil from between rows and mound it against the plants, burying the stems halfway. Repeat as needed through the growing season to keep the tubers covered.
